This looks absolutely delish! I LOVE scallops and my mouth is watering over this!
I've been making Lemon Garlic Tilapia - tilapia fillets, 1 tbsp olive oil, 1 tbsp butter, Juice of 1 lemon, 1 tsp garlic salt, 1 tsp dried parsley flakes, and Cayenne pepper to taste. Melt butter, then add all other ingredients (except fillets and Cayenne). Sautee for a few minutes. Pour over mixture over tilapia fillets in baking pan, sprinkle Cayenne over top and bake for about 13 minutes on 400, then broil for an additional 2-3. We usually have it with fresh green beans. YUM.

I made an awesome roasted veggie salad yesterday - a little of fall and a left over summer, tri-colored peppers, sweet potato, black beans, corn, red onion, asparagus, avocado, quinoa, with mixed greens and a cilantro-lime vinaigrette.
Your scallops look delicious!

Hi Jen! I just pan sear them in oil (olive or coconut) or butter! Scallops can be tricky so check this out: http://culinaryarts.about.com/od/fishseafood/ss/searseascallops.htm
