Lithe Key Lime Pie

Spring is at our heels!  I may be a chocoholic, but one of my all time favorite desserts is key lime pie.  The tart and tangy taste is like refreshing tropical sunshine.  This healthy crust-less dessert is so simple to make, with no cooking necessary!

 Ingredients:

  • 2 cups raw cashews, soaked in filtered water for at least 30 minutes and soaking water discarded
  • 1 1/2 avocados
  • ½ cup raw coconut oil
  • 1 cup fresh squeezed lime juice
  • 1/2 cup maple syrup
  • 2 dates, pitted
  • 1/4 tsp sea salt
Directions:  Blend the cashews, maple syrup, dates and coconut oil in a high speed blender or food processor until smooth. Add the avocados, lime juice, and salt and blend until airy.  Spoon filling out into a pie dish and refrigerate for two hours.  This can also be served immediately in cups a la mousse!

Using pretty much the same ingredients you can actually make a "crust" for your key lime pie too - just process dates, coconut oil, and cashews (they don't need to be soaked for this method) separately, press into a mini muffin tin, fill them with your key lime mousse and pop into the freezer for a bit. So good that my meat and potatoes loving boyfriend actually requests them!

I'm assuming I can use maybe an almond in place of cashew?

Betty - these are rough estimates but try 10ish dates, 1 to 1 1/2 cup of nuts, & 2 tbs coconut oil. Also, unsweetened coconut flakes are a nice addition to the crust, feel free to play with the amount but you'll want to end up with roughly 2 cups of nuts and coconut flakes.


YUM! Key Lime pie is a favorite in my family!

Shopping tip: DiBruno's and whole foods have bottled key lime juice, which is tangier and more flavorful than traditional limes. I usually use this (even though it's not as fresh) since a past attempt at hand-juicing enough teeny tiny key limes for a pie - I find the flavor is so much better.

If you do find a bag of fresh key limes, the results are amazing, and a manual hand-juicer or cocktail juicer helps!
